Olde Towne Inn Blueberry French Toast Cobbler
…. or Strawberry, Blackberry or Peach… any fruit you like!


Rich, scrumptious, a cross between French toast & fruit cobbler!
Serves 8-10 people. T=Tablespoon; t=teaspoon; C=cup

  • 1 or more loaves of Italian, or French bread broken into pieces. Potato bread is also excellent. Bread combinations work well.
  • 8-10 large eggs, beaten
  • ~1&1/2 c milk -adjust, according to amount / dryness of bread
  • 1 (8 oz) pkg of cream cheese or Neufchatel cheese. Reduced fat works.
  • 1/2 c brown sugar
  • 1 t vanilla flavoring
  • 1 t cinnamon
  • 1 pinch salt
  • 1 can (21 oz) blueberry (or other fruit) pie filling or two cups fresh, frozen or canned sliced fruit. A mixture of fresh fruit and pie filling works well. Blueberry and peach or blueberry and cherry are good combinations.
  • Fruit and powdered sugar to garnish (optional)
  1. Preheat oven to 375 degrees F.
  2. Butter one 14"x9" or 12"x12" casserole, or two 1-qt. casserole dishes.
  3. Break the bread into pieces.
  4. Beat eggs, vanilla, salt, cinnamon and milk together.
  5. Pour mixture over the bread. You can prepare this in advance and let it soak overnight.
  6. Cream together brown sugar and cream cheese. Spread over bread with a spatula.
  7. Spoon fruit filling on top, reserving 1/4c.
  8. Gently fold cream cheese and fruit filling into the bread. Do not blend.
  9. Spread remaining 1/4c filling over mixture. Top with additional fresh or frozen fruit, if desired.
  10. Bake for 45 min. to 1 hour-varies with density of the bread and moisture content of fruit.
  11. When the egg mixture is firm, remove from oven and let stand 5 minutes.
  12. Sprinkle the top with powdered sugar and serve.
